English summary: Currently, mankind faces various severe challenges, which need to be tackled. The global climate change and the increasing shortages in resources are the most prominent examples. One major challenge is mostly neglected, debased or just simply forgotten: the global food problem. Globally, still around 850 million people suffer from chronic undernutrition. The mentioned problem is not only a phenomenon that is bound to the African continent. In fact, many states of the so-called "Global South" are facing hunger and malnutrition. However, the global Undernutrition is just one side of the coin. Since 2008, it becomes obvious that the problem of global overweight rates is just as dramatic. Following estimates of diverse organisations around 1.4 billion people are overweight and nearly 500 million of them are obese (BMI30). Summing those numbers up, ca. 30% of the global population either faces under- or overnutrition. This leads to many severe health-, economic-, etc. stresses. The solution for both problems is a further change to sustainable food systems. This edited book will deal with those topics in detail and incorporates them into the context of a new "Great Transformation". Weltweit leiden immer noch ca. 850 Millionen Menschen an chronischer Unterernahrung. Das Problem ist dabei kein Phanomen das strikt auf den Afrikanischen Kontinent begrenzt ist. Vielmehr sind viele Staaten im sogenannten Globalen Suden von Hunger und Mangelernahrung bedroht. Die globale Unterernahrung stellt aber nur eine Seite der Medaille dar. Spatestens seit dem Jahr 2008 ist das Problem der weltweiten Uberernahrung gleichermassen dramatisch. Nach Schatzungen von diversen Organisationen sind ca. 1,4 Milliarden Menschen ubergewichtig und knapp eine halbe Milliarde Menschen fettleibig (BMI30). Nimmt man all diese Zahlen zusammen, sind ca. 30% der Weltbevolkerung entweder unter- oder uberernahrt, was zu starken Belastungen fur Gesundheit, Wirtschaft, etc. fuhrt. Die Losung fur beide Probleme ist der Wandel zu nachhaltigen Ernahrungssystemen. Der vorliegende Sammelband setzt sich mit diesen Themen auseinander und stellt sie in den Kontext einer neuen Grossen Transformation.
